The Group operates six clubs as well as a state of the art 600 seat theatre, a large Grand Ballroom and an extensive range of facilities to host events of all kinds along with a commercial office tower.

About the Role
We are seeking a natural and self-motivated leader who is ready to take on the next challenge in their hospitality career as a Head Cellar Person. Reporting to the Food and Beverage Manager, the key focus of this role is to supervise all facets of the cellar area and to coordinate the efficient daily operation of receiving all stock and deliveries being delivered to the club.
In order to be successful in this role you must have exceptional communication skills as well as high level of customer service and coordination skills. Being able to pay close attention to detail is necessary in this position. Previous experience directing and/or supervising is an advantage.
This role would suit someone who would ideally like to expand their leadership qualities and skills.

Responsibilities include:
  • Assisting in the Managing, implementing, and monitoring of the companies procurement, stocktaking, and recipes platforms. Ensuring system are up to date and used correctly through training and regular review.
  • Liaising with suppliers on behalf of BSC to achieve best product and pricing with regular review of products and pricing.
  • Assist in achieving budgeted COGS, by reducing unnecessary wastage, utilize correct procedures.
  • Oversee the ordering and control of stock levels including but not limited to food, beverage, consumables, and chemicals.
  • Communicate efficiently and effectively to internal departments, ensuring that stock is delivered in a timely manner
  • Prepare rosters, plan staffing levels with consideration of functions, peak and low trade patterns whilst maintaining wages targets.
  • Ensuring all deliveries and products are correct and up to date in a reasonable timeframe on all platforms.
  • Ensure proper storage and food preparation methods are followed in line with the company's food safety policy and any associated documentation is completed.
  • Ensure bar areas are ready for trade at assigned times and to predetermined standards
  • Bulk ordering and management of consumables, chemicals and packaging ordering, storage and par levels
  • Managing and providing solutions and clear communication should there be any issues with deliveries (including quality, pricing, storage, packaging, delivery hours)
  • Liaising with relevant key stakeholders and platform providers (accounts, IT, Culinary, chef – systems and implementation POS, L&D)
  • Recruit, train, motivate and discipline your team to improve performance and develop skills through discussions, informal/formal meetings, training sessions and appraisals.
  • Assist in the induction of new team members in the kitchen, stores, and the venue.
  • Ensure that the team works efficiently and adhere to correct procedures in relation to WHS, stock control, floor duties.
Essential Criteria:
  • Food Safety Supervisor Certification (Essential)
  • Forklift Licence (Essential)
  • Follow Workplace Hygiene Procedures Certification (Essential)
  • Provide First Aid Certification (Essential)
  • OLGR approved 'Responsible Service of Alcohol' and 'Responsible Conduct of Gambling' (Essential)
  • Holds a traffic Controller Certification (Desirable)
  • Previous experience in a supervisory role in a club environment is an advantage
  • Excellent communication both verbal and written
  • High level of interpersonal and problem solving skills
  • Multi-tasking abilities reflecting efficient organisational skills
  • A sales focus with attention to detail
  • Must be able to work days, nights and weekends
  • Immaculate personal presentation and grooming
