About The Bentley Group
The Bentley Group came to life in March 2006 when chef Brent Savage and sommelier Nick Hildebrandt opened Bentley Restaurant + Bar in Surry Hills. Bentley was a new kind of restaurant for Sydney, with food that could challenge and inspire, but in a relaxed atmosphere and with an eclectic selection of wines not offered anywhere else. In 2013 Bentley Restaurant and Bar moved to a bigger, grander space at the Radisson Blu Hotel in Sydney’s CBD. The Bentley Group established its second venue, Monopole, in Potts Point in December 2012. Yellow was the group’s third venue, launched in August 2013 and offers vegetarian and vegan dining in the heart of Potts Point. The Group’s fourth venue, Cirrus, was established on the waterfront at Barangaroo in September 2016, specialising in contemporary, sustainably caught seafood dishes and like the other venues has an extensive and eclectic wine list. In 2020, Savage and Hildebrandt re-launched Monopole in the CBD.
2023 was another big year for us, collaborating with the Capella Hotel Group in opening Brasserie 1930 and announcing the opening of contemporary Asian restaurant King Clarence towards the end of the year.
About the Role
The Bentley Group is looking for Sommeliers to fill upcoming vacancies. The ideal candidates will require to have a sound and progressive experience within a similar high-end restaurant environment, impeccable presentation and a genuine passion for delivering memorable experiences to Sydney diners.
Key responsibilities
- Be motivated and engaged with outstanding customer experience working with one of Australia’s most awarded wine lists
- Provide input on wine pairings, wines by the glass options and list additions
- Replenishing stock, ensuring that bars remain stocked throughout to ensure trade is not compromised and service levels are maintained at a high standard.
- Adhere to effective cellar stock management processes including, but not limited to; ordering, receipting, storing and stock rotation.
- Assist in achieving monthly targets and effective financial management including management of costs (COGS, Labour, Comps, Discounts, wastage) and ensuring restaurant sales budgets and profit expectations are met with a focus on driving spend per head.
- Provide support to the Sommelier team and share expertise with wider team to encourage upskilling across the restaurant.
