About the Opportunity

Under the direction of the Chief Cook, the Cook prepares and serves meals, ensuring that Marine order 11 and the MLC regulations are adhered to with regard to:

  • Providing nutritional meals that cover the requirements of the ship and take into account differing cultural and religious backgrounds, and dietary restrictions which may be present
  • The serving of meals in hygienic conditions
  • Ensuring that the planning and use of provisions remains within the victualling budget and minimising waste

The Cook assists the Chief Cook with ensuring:

  • Meals are ready on time as required, and that the quantity is sufficient for all persons on board
  • That when it is necessary to run two sittings, the second sitting also receives hot fresh food at every meal
  • The self-catering area is stocked with sufficient snacks and drinks out of mealtimes
  • Proper segregation and processing of all waste from galley and stores areas according to the Garbage Management Plan
  • That all garbage quantities, including food waste, are reported to the Chief Mate for record keeping purposes

The following areas are clean and tidy at all times:

  • galley, dining room and scullery
  • all fridges, freezers and storerooms containing ships provisions
  • galley waste processing room.

The Cook:

  • Records stock usage
  • Assists the Chief Cook with inspecting all stock as it is loaded for quality and quantity, and reports deficiencies to the Chief Cook
  • Ensures stock is rotated and used within ‘best before’ dates
  • Motivates and mentors the galley team in sustaining the vessel’s safety culture including promoting a robust onboard safety reporting ethos for observations, hazards, near misses, non-conformities, accidents, incidents and hazardous occurrences
  • Attends training courses and seminars while on leave, as required
  • Performs other duties as instructed by the Master or Chief Cook
  • If the Chief Cook is not on board, the Cook assumes the responsibilities of the Chief Cook.

You’re a respectful and professional person who demonstrates exceptional values in everything you do.

To be successful in this role, you will have:

  • The highest levels of personal integrity and ethical behaviour.
  • Right to work in Australia (and on an Australian flagged vessel)
  • AMSA-issued Certificate of Proficiency or Certificate of Recognition as Marine Cook with the following additional qualifications (Essential):
  • Certificate of Safety Training (COST) (STCW Reg VI/1
  • Security Awareness Training
  • Elementary first aid—Reg VI/1 Code A-VI/1 table A-VI/1-3
  • Valid Passport
  • AMSA Certificate of Medical Fitness
  • Maritime Security Identification Card (MSIC)

This is a position of trust and responsibility and to support this we will conduct a thorough probity assessment as an essential selection component for this role. You must have the ability to become a Permanent Resident of Australia and be willing to undergo an AAD Polar Medical Examination.
